Banana Bread

When it’s Sunday and you realise that you have too many bananas in the fridge…

Banana Bread

Servings 2 loaves


  • 6 Bananas from bruised and broken to fresh and yellow
  • 2/3 cup Butter melted
  • 1 cup Sugar
  • 2 Eggs
  • 2 t Vanilla Essance
  • 2 t Baking Soda
  • 1 pinch Salt
  • 3 cups Nutty Wheat Flour or All Purpose Flour
  • Chopped Nuts or seeds to taste


  1. Preheat oven to 180C
  2. Break the bananas into a bowl and smash with a fork.
  3. Add the rest of the ingredients and mix with the same fork.
  4. Pour the batter into 2 bread pans.
  5. Bake for 50 - 60 mins. The bread should be nice and brown.
  6. Cool and enjoy.

Recipe Notes

I love baking Banana Bread.  I feel very Stepford Momish in the ease with which I bake this bread and then with the aroma wafting through the house.

It's always good to have your breads and baked goods cool before you eat it, but I don't feel so strongly about that rule when baking Banana Bread.  I think it's very important to the process to cut a thick slice as soon as it comes out of the oven and lather on an equally thick layer of butter. Butter NOT margarine, PLEASE!  The rest of the bread can be cooled for the weekly sarmies

    What an amazing, quick and easy recipe! I just tried it with our overripe fridge bananas. I added some peanut sprinkle as suggested. It’s baking in the oven at the very moment. Cannot wait to taste!! Happy Heritage Day!
