A heart-warming soup to eat on a cold, rainy, winter’s day.
Beef and Bean Soup
- 1 splash olive oil
- 1 kg Potjiekos beef pieces
- 2 Onions chopped
- 2 Carrots chopped
- 2 Garlic cloves chopped
- 2 T Ground coriander
- 250 gr White beans soaked overnight
- 1 T Worcestershire Sauce
- 1 T Wholegrain Mustard
- 10 cups Beef Stock
- Salt and pepper to taste
Heat oil in your biggest, heavy-bottomed pot
Brown meat in batches - don't overcrowd the pot
Fry onions and carrots until soft
Add garlic and mix
Add the rest of the ingredients
Bring to boil, turn down heat, cover and simmer for 2 or more hours
Take the lid off and let the soup thicken
Taste and season to taste
The soup is ready when the liquid is thick and the meat and beans are soft.
Serve with crusty bread and butter and a glass of red...

I suggest starting the soup at 11, open a bottle of red at 12, play Uno with the kids and eat at 5 - the perfect way to while away a cold, rainy Sunday.
