Goat’s cheese and Beetroot Tart

The perfect easy starter to go with the perfectly easy dinner party main.

Goat's cheese and Beetroot Tart

Ingredients

  • 1 pack Puff Pastry
  • 6 Small Beetroots
  • 200 gr Goat's cheese
  • 150 gr Mascarpone
  • 2 T Honey plus more to drizzle
  • handful Walnuts
  • 1 t Fresh Thyme
  • splash Olive Oil
  • Salt and Pepper to season
  • Honey to drizzle
  • Spray and Cook

Instructions

  1. Boil the beetroot until soft. This will take about 1 hour. When the beetroot is soft, run some cold water over them and rub skin off the beetroot. Slice the beetroot.
  2. Preheat the oven to 200C
  3. Mix the goat's cheese, mascarpone and honey in a bowl.
  4. Unroll the pastry onto a prepared baking dish. Fold the edges of the pastry to create a small border. Prick the border with a fork.
  5. Bake for 14 minutes, until puffed and golden.
  6. Gently spread the cheese mixture within the border of the tart.
  7. Add the beetroot slices and scatter with walnuts. Drizzle with olive oil and salt and pepper.
  8. Return to the oven for 10 minutes.
  9. Serve with thyme and a drizzle of honey

Recipe Notes

Starters are best served on a pretty platter and enjoyed with a glass of wine, I'm quite partial to a dry pink.

      Hi, you can swap the goats cheese with feta or any other hard strong cheese.
