Instructions
  1. Light a fire and prepare it to braai the schnitzels.
  2. To make the breadcrumbs toast half a loaf of bread - toast until just before burn. Blitz the toast in a food processor and add salt, pepper and dried mixed herbs - to taste.
  3. Heat the oven to 190C.
  4. Put all the potato ingredients into an oven-proof dish and bake until the potatoes are are soft.
  5. Place the eggplant ingredients into an oven-proof dish and bake until done. Put the potatoes and eggplant in at the same time.
  6. Just before serving, grill both the potatoes and eggplant for some colour and crunch.
  7. For the Mushroom Sauce, heat the oil and add the onion. Saute until soft.
  8. Add the garlic, mushrooms and butter and saute until soft.
  9. Add the thyme, origanum and Worcestershire sauce, saute until aromatic.
  10. Add the wine and let it reduce and then add the coconut cream. Stir. Let it reduce.
  11. Mix the gravy powder and milk together and add to the sauce. Stir.
  12. Let the sauce simmer until it has reached the desirable thickness.
  13. Make the salad.
  14. Put the breadcrumbs, beaten eggs and flour mixed with paprika, salt and pepper on three different plates.
  15. When the fire is ready, warm the oil in the braai-friendly pan.
  16. Dip the steak in the flour then egg then crumbs and fry for about 2.5 minutes on each side.
Recipe Notes

The steak works best when you have one son dipping the steak into the flour and egg, the other son from egg to crumbs and the husband braaiing while you watch with a glass or two of Leopards Leap Chardonnay Pinot Noir - I mean, I did do everything else...

If you don't have a braai-friendly pan - get one. Until then, you can get fry in a pan on the stove.
