Slow roasted salmon cooked in lots of oil, lemon and herbs.
Salmon Slithers in Olive Oil
- 1 kg Salmon
- 1 cup olive oil
- 1 Lemon sliced
- 5 t Thyme dried
- 2 t Fish Seasoning or salt and pepper to taste
Pre-heat the oven to 150 C.
Season the salmon with the thyme and fish seasoning (I really like the Cape Herb & Spice Fish Seasoning) and place in a baking dish.
Pour the oil over the fish and scatter the lemon slices over the top and around the fish.
Place in the oven and roast for about 20 minutes.
Serve with a big fresh green salad.
The pro of being a teacher is the holidays - the con of being a teacher is the holidays. I tend to overindulge way too much during the holidays, so I eventually get a point where I just can't eat anything rich or heavy.
We had just returned from a weekend away where the food and the wine flowed, so in an attempt to 'detox' I went to the local fish shop and found a packet of salmon slithers (off-cuts if you will) for R35 - SAY WHAT?! Why must one spend hundreds on food when you can buy cheap and cook it well?
